Directions
- Preheat oven to 325 degrees.
- Whisk together melted butter and brown sugar.
- Add cinnamon, maple syrup and cocoa. Mix well.
- Using a mortar and pestle or food processor, grind Caf-Lib into a powder.
- Coarsely crush walnuts.
- Add remaining ingredients (except cranberries and chocolate pieces). Mix well with a spatula.
- Place mixture on a parchment-lined baking sheet, flattening slightly.
- Bake for approx. 30 minutes.
- Leave to rest for at least 30 minutes before breaking the granola into pieces. This step is very important if you want chunky granola.
- Add the cranberries and chocolate chips. Mix and store in an airtight container.
- Serve over your favorite yogourt, ice cream or smoothie!
